Definition
- Oval, semi-stretched cheese, typical of the Sila's plateau (Calabria), made of whole cow's milk, fat cheese of short or long maturation, left to mature for at least 30 days in cellars; its name comes from its ripening, the cheese is bounded in pairs, straddled on wooden perches.
