Definition

  • Salume obtained from the meat of pigs belonging to the Large White, Landrace and Duroc breeds, born and bred in the territory of the province of Viterbo. It has a cylindrical shape and a binding characterised by a string placed vertically and rings horizontally, a pinkish colour tending to red and a delicate, slightly sweet and peppery or garlicky flavour.
