Definition

  • Cold cut produced from lean meat of pigs born, bred and slaughtered in the regions of Northern and Central Italy. It has a cylindrical shape, a red colour with lard veins and a sweet, delicate flavour. The name 'Cacciatore' (hunter) derives from its original use for hunters' rations.
