Definition

  • Vegetable of the composite family, species Cichorium intybus, distinguished in the "Precoce" (precocious) and the "Tardivo" (late) types, cultivated in the provinces of Treviso, Padua and Venice. The "Tardivo" has regular sprouts and wrapping leaves that tend to close the head in the apical part, the "Precoce" has a voluminous, elongated, tightly closed head. Both are red in colour with a white main nerve and have a bitterish flavour.
