Definition
- Vegetable of the botanical species Chicorium inthybus, distinguished in two types: Precoce (precocious) and Tardivo (late) and cultivated in the provinces of Verona, Vicenza and Padua. It has an elongated oval shape, slightly elliptical, deep red leaves and white main nerve, bitter taste and crunchy texture.
