Definition
- Stretched curd cow's milk cheese, with a classic pear or oval shape. The rind is smooth, thin, cream-colored tending towards straw-yellow, the texture is soft or semi-hard. The flavor is pleasant, sweet, delicate or spicy and tasty depending on the seasoning.
