Definition
- Salume obtenido de la carne de cerdos pertenecientes a las razas Large White, Landrace y Duroc, nacidos y criados en el territorio de la provincia de Viterbo. Tiene forma cilíndrica y una ligazón caracterizada por un cordón colocado verticalmente y anillos horizontalmente, un color rosáceo que tiende al rojo y un sabor delicado, ligeramente dulce y picante o a ajo.
