  • Hard, round-shaped, pale yellow cheese, cooked and seasoned at least 12 months, entirely produced (from cattle breeding, milking until the concrete production) with cow's milk, salt and veal rennet, with no additives or preservatives, following the guidelines protected by the Regulations, in a precise geographical area of Emilia Romagna.
