Definición
- Cylindrical, semi-fat and slow- maturing cheese, produced with raw milk. The rind is hard and smooth, the color is dark or golden yellow, the paste is hard, with a finely granular structure and white or straw- yellow in colour. The aroma is fragrant and the flavor delicate.
