Latteria (it)  

Definición

  • Latteria is a cheese produced with raw unpasteurized milk therefore it does not undergo heat treatments. The dough is semi – cooked and it is pressed into special round moulds, its weigh can vary between 5 and 7 kg. Today it is sold in three different ways according to its level of seasoning and processing: 1) “fresh” it ages up to 30 days; 2) “mezzano (medium) it ages between 60 and 90 days; 3) “seasoned” it ages more than 90 days.
